Let me explain: A meta-analysis from a group including Harvard and Cambridge researchers analyzed 72 studies and concluded that there's no evidence that ditching saturated fat (the kind found mainly in butter, eggs, and meat) for the monounsaturated and polyunsaturated kind (found in a variety of vegetable oils) delivers health benefits. The New York Times' Mark Bittman responded by declaring that "butter is back." But then journalist James McWilliams countered in Pacific Standard that the study was flawed, and saturated fats—like those in butter—deserve more scrutiny after all. So who's right?
